Interfaith Conference Asian Salad

2 heads green leaf lettuce, washed and sliced
2 cups shredded green cabbage
1 cup shredded purple cabbage
1 cup shredded carrots (half of a 10 oz. bag)
1/4 cup chopped cilantro
1/4 cup sliced green onion
Approx. 1 cup cooked angel hair pasta, cooled*
Approx. 2 large chicken breasts, grilled and cubed
1-2 cans mandarin oranges, drained
2-3 T. toasted sesame seeds
3 oz. bag fried won ton strips**

In a large salad bowl toss together the lettuce, both types of cabbage, carrots, cilantro, green onion and angel hair noodles. Top with chicken and mandarin oranges. Sprinkle with sesame seeds. Just before serving add won ton strips and toss with dressing (see recipe below).

*Before boiling pasta break the noodles in half to avoid really long pieces. After pasta is drained, toss with a small amount of canola oil to avoid clumping as it cools.

Dressing:

4 T. sugar
6 T. rice vinegar
2 T. sesame oil
1 tsp. salt
1/2 tsp. pepper
1/2 cup canola oil

Place the first 5 ingredients in a blender. With blender running, slowing stream in canola oil to emulsify. Can easily be doubled for an extra large salad.


Oatmeal Cranberry Orange Cookie Recipe 

1 cup butter, melted 

1 ¼  cup packed brown sugar
¼  cup white sugar
½ teaspoon cinnamon
1 tablespoon pure vanilla extract
1 egg
1 egg yolk
1 ½ cups old-fashioned oats
2 cups all-purpose flour
½ teaspoon baking soda
¾  teaspoon salt
1 heaping cup dried cranberries
2 whole orange rinds, zested
½ cup raw chopped cashews

Instructions:
Preheat the oven to 325 degrees. 

Melt butter and let cool slightly. 
Mix flour, baking soda and salt; set aside.
In a medium bowl, cream together the melted butter, brown sugar and white sugar until well blended. Beat in the cinnamon, vanilla, egg, and egg yolk for 2-3 minutes until light and creamy. Mix in the flour mixture until just blended. Add the oats, nuts, cranberries and orange zest. Mix until just blended.

Place balls of dough onto lined cookie sheet and bake for 12-14 minutes. 

Molasses Cookies

1 1/2 cups butter, softened
2 cups sugar
1/2 cup molasses
2 eggs
1 tsp. salt
2 tsp. cinnamon
1 tsp. ground cloves
1 tsp. ground ginger
4 tsp. baking soda
4 cups flour
additional 1/2 cup granulated sugar

Directions:

Cream butter and sugar together until fluffy. Add molasses and eggs and mix well. In a separate bowl whisk together the salt, cinnamon, cloves, ginger, baking soda and flour.

Add to molasses mixture and stir to combine. Roll dough into balls, then lightly roll each ball in additional granulated sugar. Bake at 375 degrees for 8 - 10 minutes.
